Bellustar Journey at Bar Bellustar is a pairing set that celebrates encounters between alcoholic beverages and ingredients nurtured by the same local climate and culture.For this 13th edition, we have prepared a special experience pairing The Akkeshi Single Malt Bellustar Cask Strength, an original-label whisky created to commemorate the hotel’s third anniversary, with ingredients from Hokkaido.Enjoy the strength and delicacy of Akkeshi whisky, together with the marriage it creates with ingredients from northern Japan.

A single malt whisky that combines the strength of an Islay malt, born from the natural environment of Akkeshi, with a distinctly Japanese delicacy and umami.Notes of sweetness reminiscent of wasanbon sugar, evolving aromas from sherry casks, and a lingering umami reminiscent of kombu dashi come together in harmony.

An amuse selection designed with whisky as the centerpiece, carefully composed to create the sensation of a marriage gradually taking shape in the mouth.Drawing on the chef’s sensibility rooted in both Italian and Japanese culinary cultures, each dish has been arranged to complement the character of the whisky while showcasing ingredients from Akkeshi.

The bounty of northern land and sea is expressed in three dishes:Green Olive, Olive all’Ascolana & Dried Salmon Jerky, where the umami of the dried salmon jerky harmonizes with the whisky’s smokiness; Stone-Oven Roasted Wild Akkeshi Venison, carefully cooked and served with truffle and shiitake-infused salt; and Bisque Croquette, capturing the umami of scallops and snow crab.Each dish resonates with the whisky, allowing guests to enjoy a lingering finish with depth.
