Ishigaki-island KITAUCHI Farm Premium Beef
KITAUCHI Farm Premium Beef is kuroge wagyu beef only from cows from a pedigree with genes for deliciousness that are fattened up to forty months in the natural environment of Okinawa’s Ishigaki Island. These specific cattle are extremely rare, with only four heads produced monthly.
For the Ishigaki Island Gourmet Fair’s main dish, loin, which allows the finest experience of this special wagyu beef’s allure, is grilled with the utmost care by our chef to bring out the umami of the fat and depth of flavor of the lean meat to enable you to savor them to the full.

A feast of carefully selected tropical ingredients
In addition to Ishigaki Island Kitauchi Farm Premium Beef, we offer a variety of delicacies such as homemade jimami tofu, Okinawan island shallots, and lobster. We use these carefully selected seasonings to bring out the maximum flavor of the ingredients.

It also offers Yaeyama noodles as an alternative to white rice and a dessert made with Ishigaki-grown pineapple and mango. A wine pairing course is available that begins with champagne, continues with three varieties of wine curated to perfectly match the dinner’s dishes, and finishes with an ending drink of either juice from Okinawa or awamori served in a Ryukyu glass tumbler.
